There are few things I enjoy eating more than the crispy skin of a freshly roasted pig. Have you tried it?
The occasion was a family baptism. My new niece Lianna was baptized into the Catholic church in a ceremony which included about 20 of her Godparents. What followed was a 10 hour banquet featuring some of the best foods imaginable. I love being part of a Filipino family.

Mmm, lechon. If it wasn't so insanely expensive (and very unhealthy in quantity), I'd eat lechon every day. Have you tried lechon de leche (roasted suckling pig)? It's to die for. Yum!
I do not think I have every had the pleasure. I'll have to ask my mother-in-law to make me some.

As a first generation Cuban American, yes, I have had me some lechon-- mmmmm,mmmm good!
That's disgusting.
I'm sure it tasted delicious, however. I haven't had roasted pork in ages...it's hell being married to a vegetarian.
it takes some getting used to that's for sure. The funny thing is the fight over the skin. Once the pig is ready, it is surrounded by people with knives who hack the skin off and hand it to the crowd. It is almost like watching a natgeo cultural special. Of course, I'm always in the crowd for my piece. it's delicious.
